Classic Apple Fritters
Classic apple fritters with a twist. Diced apples are tossed with cinnamon, sugar, and lemon juice, then folded into a light batter scented with lemon zest and a touch of tarragon.
Fried until golden and glazed while still warm, these fritters stay crisp on the outside with tender, apple-studded centres. Tarragon brings an unexpected aromatic note that makes them unforgettable.

Ingredients
For the Apples:
2–3 medium apples (about 12 oz / 340 g), peeled, cored, diced small
1 tbsp (12 g) sugar
1/2 tsp (1 g) cinnamon
1 tbsp (15 ml) fresh lemon juice
For the Batter:
1 2/3 cups (200 g) all-purpose flour
2 tsp (8 g) baking powder
1/2 tsp (3 g) salt
1/4 cup (50 g) granulated sugar
3 large eggs
3/4 cup (150 ml) whole milk
1 tsp (5 ml) vanilla extract
1 tsp (2 g) cinnamon (optional)
1 tsp (2 g) finely chopped fresh tarragon
finely grated lemon zest of 1 lemon
For Frying:
Neutral oil, for deep frying (to 375 °F / 190 °C
For the Glaze:
1 1/2 cups (200 g) powdered sugar
2–3 tbsp (30–45 ml) whole milk or cream
1/2 tsp (2 ml) vanilla extract
Method
Prepare Apples: Toss diced apples with sugar, cinnamon, and lemon juice. Set aside.
Make Batter: In a bowl, whisk flour, baking powder, salt, sugar, cinnamon, tarragon, and lemon zest. In another bowl, whisk eggs, milk, and vanilla. Combine wet and dry just until smooth.
Fold In Apples: Stir the apple mixture into the batter until evenly coated.
Fry Fritters: Heat oil to 375 °F (190 °C). Drop batter by heaping spoonfuls into the oil. Fry 2–3 minutes per side until golden brown and cooked through. Drain on a rack over paper towels.
Glaze: Whisk powdered sugar, milk, and vanilla until smooth. While fritters are still warm, dip or drizzle with glaze. Let set before serving.

Lemon juice keeps the apples bright and prevents browning, while lemon zest in the batter enhances the subtle anise note of tarragon. This combination balances sweetness with freshness, elevating a classic fritter into something refined.
